  1. Prepare the chicken breasts: Start by placing the chicken breasts on a cutting board and covering them with parchment paper or plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken until each piece is an even thickness, about ½ inch thick. This step is extremely important because evenly sized chicken cooks at the same rate, preventing dry edges and undercooked centers.
