Ingredients:
- 1/2 cup coconut milk (unsweetened, full fat)
- 1/2 cup cold sparkling water
- 1 tbsp fresh lime juice
- 5-6 fresh mint leaves
- 1-2 tsp erythritol or monk fruit sweetener (to taste)
- Ice cubes
- Lime slices and mint sprig (for garnish)
Instructions:
- Muddle mint leaves with sweetener and lime juice in a glass.
- Add coconut milk and stir well.
- Fill the glass with ice and top off with sparkling water.
- Garnish with lime slices and a mint sprig. Serve immediately.
