Keto Strawberry Shortcake – Light, Sweet & Low-Carb Delight

I grew up loving classic strawberry shortcake in the summertime — it was always a family favorite after dinner. When I started eating low-carb, I was determined to recreate that sweet, creamy bite without the sugar crash. This keto version is just as satisfying — maybe even better!

📝 Ingredients:

Shortcake Biscuits:

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • ⅓ cup butter, cold and cubed
  • 2 large eggs
  • ⅓ cup unsweetened almond milk
  • 2 tbsp erythritol or monk fruit sweetener
  • 1 tsp vanilla extract

Strawberry Filling:

  • 1 cup fresh strawberries, sliced
  • 1 tbsp erythritol (optional, for macerating)

Whipped Cream:

  • ½ cup heavy whipping cream
  • 1 tbsp powdered erythritol
  • ½ tsp vanilla extract

🔪 Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, baking powder, and salt.
  3. Cut in cold butter using a fork until mixture is crumbly.
  4. In another bowl, whisk eggs, almond milk, sweetener, and vanilla.
  5. Combine wet and dry ingredients to form dough. Shape into 4–6 shortcakes.
  6. Bake for 18–20 minutes or until golden brown. Let cool completely.
  7. Macerate strawberries with sweetener (optional) and set aside.
  8. Whip cream, sweetener, and vanilla until stiff peaks form.
  9. Slice shortcakes in half, layer with whipped cream and strawberries. Top with more cream and berries.
