- 2 tbsp erythritol or monk fruit sweetener
- 1 tsp vanilla extract
Strawberry Filling:
- 1 cup fresh strawberries, sliced
- 1 tbsp erythritol (optional, for macerating)
Whipped Cream:
- ½ cup heavy whipping cream
- 1 tbsp powdered erythritol
- ½ tsp vanilla extract
🔪 Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix almond flour, coconut flour, baking powder, and salt.
- Cut in cold butter using a fork until mixture is crumbly.
- In another bowl, whisk eggs, almond milk, sweetener, and vanilla.

- Whip cream, sweetener, and vanilla until stiff peaks form.
- Slice shortcakes in half, layer with whipped cream and strawberries. Top with more cream and berries.
