📝 Ingredients:
- 2 salmon fillets (skin-on)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- ½ cup sun-dried tomatoes (in oil), drained and chopped
- 1 cup fresh spinach
- ¾ cup heavy cream
- ¼ cup grated Parmesan
- Salt & pepper to taste
🔪 Instructions:
- Season salmon with salt and pepper. Sear in olive oil over medium heat until cooked through. Remove and set aside.
- In the same pan, add garlic and sun-dried tomatoes. Sauté for 1 minute.
- Pour in heavy cream and Parmesan. Simmer until thickened (2–3 minutes).
- Stir in spinach until wilted.
- Return salmon to the pan, spooning sauce over the fillets.
- Serve hot, garnished with parsley or lemon wedges.

- Substitute salmon with shrimp or chicken for variety.
- Add mushrooms for extra richness.
