Keto Creamy Tuscan Salmon – Rich, Low Carb & Ready in 30 Minutes

📝 Ingredients:

  • 2 salmon fillets (skin-on)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ cup sun-dried tomatoes (in oil), drained and chopped
  • 1 cup fresh spinach
  • ¾ cup heavy cream
  • ¼ cup grated Parmesan
  • Salt & pepper to taste

🔪 Instructions:

  1. Season salmon with salt and pepper. Sear in olive oil over medium heat until cooked through. Remove and set aside.
  2. In the same pan, add garlic and sun-dried tomatoes. Sauté for 1 minute.
  3. Pour in heavy cream and Parmesan. Simmer until thickened (2–3 minutes).
  4. Stir in spinach until wilted.
  5. Return salmon to the pan, spooning sauce over the fillets.
  6. Serve hot, garnished with parsley or lemon wedges.

📌 Tips:

  • Substitute salmon with shrimp or chicken for variety.
  • Add mushrooms for extra richness.
  • Pair with zucchini noodles or steamed broccoli.
